Continuation....

Ok so my somewhat boring life is well...not so boring...I have been going through a lot over the past few months and am really not sure what to do about it? We have a lot going on and I just feel like I am going to scream sometimes! So I have had this lymph node in my neck that has been there since Easter. There was one that popped up behind my ear before Easter but went away...then the one on my neck...and I have had a few more pop up here and there...but the one on my neck has not gone away. And it is quite large. I have been referred to an ENT that says I have either cat scratch disease or lymphoma. NICE huh? Well seeing that I do not own a cat, you can see how nervous I am. I am now in search of a new ENT. My friend at work gave me a few names, I am going to do some research before I have someone take it out. I am extremely tired...a lot and some days I feel like I can not function. But...I love God with all my heart and know no matter what anyone else thinks...he will take care of me :)I'm sorry but I do not want to dwell on this because it makes me sad. My primary care physician feels as though we need to remove it asap because I have been on three different types of antibiotics and none have worked.

So there's the big secret...So now moving on...I will keep you posted!

Darn it's been a while...

Soooo much has happened in this crazy life of mine since the last time I blogged...well I am now officially an orphan...not in a literal sense but in a way that I am no longer speaking to my family...YUP...they are all crazy and I am just tired of them acting like they do. To put it plainly...or keep it PG-13, they are all buttholes...the only one who is not... is my brother K and my Dad is borderline (sometimes he's fine then other times he's just mean & crazy)...My sister in law M, is no longer speaking to me and I am not sure why? I love her & miss her and my nephew very much but ...again...I only want people in my life who want/need me in theirs...

So I'm a lil slow...but it's taken me 33 yrs now but I have realized that most of my family members are indeed crazy...I think I may have picked up on some of these traits but...I am not clinically insane! Therefore I am "normal" in a way I guess...at least that is what I believe. I wish things were different but sometimes damage has been done and apologies are no longer wanted... It makes my heart hurt but I have MY family...my husband and my kids and I have great friends! I think that's all I need...I'm learning that the hard way...I AM GRATEFUL & VERY BLESSED!!! THANK YOU GOD FOR THEM!

Well on a high note, one of my BFF's came to visit me during 4th of July weekend. It was a great weekend! I didn't want to see her go...Colby celebrated his 9th birthday * Yay! We had a carnival themed party and it was sooo much fun! Popcorn, sno-cones, corn dogs,carnival games...a kids dream!

I have to tell you though...birthday parties...well any celebration actually...gets me a bit giddy! I love it! If I could quit my job and open a party planning business I would soooo do it...maybe one day...

I have alot more to blog about ( kids already started school, donkeys butt, etc.) but I will blog later when I have more time. I promise I will blog tomorrow and fill you in on the other crazy things going on...PROMISE PROMISE...well if you care enough to come back tomorrow...


* RANDOM NOTE: By the way... I made some red velvet cupcakes from scratch & cream cheese icing tonight for work and they were so delish!

Here's the recipe if you like:

24 cupcakes
Ingredients
2 1/2 cups all-purpose flour
1 1/2 cups sugar
1 teaspoon baking soda
1 teaspoon salt
1 teaspoon cocoa powder
1 cup applesauce
1 cup fat free sour cream/mayo
2 large eggs, room temperature (or eggbeaters)
2 tablespoons red food coloring
1 teaspoon white distilled vinegar
2 teaspoons vanilla extract

Preheat the oven to 350 degrees (When in doubt 350)
Grease muffin pan with oil or spray
In a medium mixing bowl, sift together the flour, sugar, baking soda, salt, and cocoa powder.

In a large bowl gently beat together the applesauce, sourcream or mayo, eggs, food coloring, vinegar, and vanilla with a handheld electric mixer. Add the sifted dry ingredients to the wet and mix until smooth like pancake batter. (may be a lil thicker)

Divide the batter evenly using a 1/4 measuring cup.
Bake in oven for about 30 minutes-depending on your oven
Test the cupcakes with a toothpick for doneness.
Remove from oven with hotpads
Allow cupcakes to cool about a half hour before frosting
Frost and make sure you refrigerate

ICING

Ingredients
16 oz of cream cheese, softened (2 pkgs)
1/2 cup butter, softened
2 cups sifted confectioners' sugar
2 teaspoons of vanilla extract
1 tablespoon of vanilla pudding

Directions
In a medium bowl, cream together the cream cheese and butter until creamy. Mix in the vanilla then gradually stir in the confectioners' sugar & pudding . Refrigerate for about 1 hr before frosting.
