Some Simple Recipes You Might Like! If Not...Oh Well...

So the other night when my hubby was out of town, we (the kids & I) decided to make s'mores...it was rainy out so the fire was out of the question...none likes soggy s'mores...So we improvised! Ok so it doesn't take a brain scientist to figure this out but here's what I recommend:


2 slabs of graham cracker
1 mini herseys
2 marshmellows


Place graham cracker on microwave safe plate (yes I had to mention safe)
place marshmellows on graham cracker slab

Depending on your microwave wattage, will depend on how long you cook it for. I cooked mine for about 10-15 seconds.

Remove plate carefully from the microwave and place mini hershey bar on top and then top with the other graham cracker slab. Press down until the marshmellow oozes out of the side.



Yummy! Quick & Super Simple! They were a huge hit!

Just because it's raining doesn't mean you have to give up on S'mores! Now if you don't have a microwave...then I don't know what to tell ya...

Mexican Lasagna




So I remembered one time at a Church dinner, we had a Mexican Lasagna but with real lasagna noodles, not tortillas. So here is my doctored recipe. My family ate the whole pan. I served it with my secret fresh salsa (I will share later-not ready yet to give this to the world-haha) and mexican rice. YUMMY!

THIS WILL MAKE ONE 9 X 12 DISH WHICH FED MY FAMILY OF FIVE (INCLUDING ONE VERY HUNGRY TEENAGE BOY)



Looks kinda gross but trust me it's good & super easy! My camera is kinda sucky!

1 lb of ground beef
1 packet of taco seasoning
1 box of uncooked lasagna noodles (any brand is fine)
1 large jar of salsa or 2 small jars
1 reg can of enchilada sauce (any brand is fine)
1 small can of diced chiles
1 small can of olives (optional)
1 can of mexi corn
2 8 oz. bags of cheese (I used mexican cheese & colby/monterrey)
1/2 of green pepper diced
1/2 medium onion diced
1 cup of shredded lettuce



1. Preheat your oven to 350 degrees
2. Over medium heat,Brown ground beef, rinse & drain.
3. Mix ground beef & taco seasoning together.
4. Remove ground beef from heat into large bowl
5. Add remaining ingredients to the bowl except cheese, mix well.
6. In seperate bowl, mix both bags of cheese together.
6. Spray 9 x 12 pan with cooking spray.
7. Line uncooked lasagna noodles in pan
8. Pour taco bowl mix, just enough to cover noodles (about 1/3)
7. Sprinkle the layer with cheese mixture
8. Repeat layer two more times. (noodles,mixture,cheese)
9. Bake covered about 1 hr. 15 minutes.
10. Take out and allow it to cool for about 5 minutes.
11. Top with 1 cup of salsa, remaining cheese (if any) shredded lettuce and olives (optional) My kids don't like them but I love them!

Garnish with guacamole and/or sourcream

I hope your family devours it like my pack of wolves did!

A Happy Day....

well until my daughter tells me that a lil boy in her class called her stupid?!? And...get this...that the only thing she'll be good for is being a stripper!!!

WHAT!!! Oh hell no!



That stupid kid is lucky I didn't know that during the ceremony or else I would have caused a scene and spent the night in the local police dept, pleading insanity! I picture it like something out of "Malcolm In The Middle".

What a lil s***head! My daughter is smart and beautiful, no she isn't the smartest kid (she does have a few learning issues) but saying she will be a stripper is demoralizing! My daughter is the most moralistic (is that a word?) kid I know...I envy how much she loves God and her family and is just very honest and true! Way more than others...including me! I told Makenna she knows she will be something big one day so don't let it bother you! Boys are just dumb!

BUT the truth is...it's really bothering me! I obviously know this kids an ass! He obviously comes from a family of asses....



If I could get 5 minutes with this kid and his stupid mother! Let me tell ya...

I told Makenna to tell him or anyone who ever said that again to tell them "Yeah too bad you would never be able to afford me...LOSER!" Is that bad?

Teenagers, Teenagers, Teenagers...



What is going on here? I feel like I am in a Twilight Zone episode...you know the one...the one where there's an alien living in your house? Right now alien count: 1 & a 1/2 ...I am going to go absolutely insane before 2020...that is when my youngest child is due to graduate...dang...that seems sooo far away....Ughhh cause it is! MAN!TEN YEARS! I have three kids in three different stages of life right now and I am about to go INSANE!

So what do I do until then. Felonies are not an option! I can't afford the bail...My youngest is still sweet, still hugs & kisses me. He is not ashamed to tell anyone he is a Momma's Boy. Which of course I think is sweet. My husband thinks that it's making him into a sissy! * Gasp! NO WAY!!! He doesn't get beat up on the bus or anything so we are good! FOR NOW!

But my oldest...ughhh everything is a debate. He says he is going to be an architect when he grows up but I am convinced otherwise...I was thinking more along the lines of Lawyer or Politician? I can say nothing right...unless it benefits him! I know one day I will get my sweet boy back (all my older friends keep telling me this) I am totally trusting them! My oldest is a goodlooking, smart, athletic boy and he knows it. Why he is so cocky...I do not know? Was it because when he was little I filled his head with positive things & high self esteems? Always telling him he was wonderful,number 1, great at everything? Damn did I do him an injustice...hopefully he'll outgrow it...or I will be a pain in his arse forever!


But like today...I was making his sandwich for his lunch and looked up at him to say good-bye and he now towers over me (not like that's hard) but he's almost 6ft. He said "Thanks Mom" and smiled! He does still allow me to pray over him which comforts me and I think it comforts him too.

My daughter is still sweet but she is dangling on the dark side...



a lil too much for my taste if you ask me...I have noticed that she is a little more emotional these days...she is 11...that horrid age! She calls herself a Tweener! How fitting! I like to call myself that too...but her Tweener is not that good...Somehow I can still hear my Dad saying "Just wait til you have kids...paybacks a b***h" Ughhh *Shaking my head! Grrr...I hate that he was right! With her it's just sooo much drama! This girl said this...this girl said that...I DON'T CARE! TELL THE LIL' B's TO SHUT IT...Probably not the best parenting advice but hey noone said I was Mother of The Year! Everyday it's a different drama...so much so that a reality show could set-up shop in my living room!

I just hope we can survive the next few years...it makes me really sad to think my oldest is starting high school...makes me sad *key sad violin type music here...makes me really sad...it takes me back to when he was little about 2 years old and all he wanted was me...he loved me and didn't talk back, just smiled and the little words that came from him were genuine and true...Ahhhh...memmories...cherish them...you know why? Cause sometimes that's all you got...everything else just gets sucked away...if you don't have a teenager...be grateful! BEST KEPT LIL SECRET....GROUPON!!!



Groupon? I bet you are wondering what Groupon is? Well I'd be happy to tell you! Groupon is a website that gives you extraordinary deals but you have to act fast and have enough people to activate the deal. For ex: Today in my area, they had a special on golfing, a 3 par course with a bucket of medium balls (about 90 balls) for 7 bucks!

I am not sure how they can do this? But it is great on the wallet! Everything from restaurants to hotels to shoppping...they even have an iPhone application. Natalee Holloway disappeared without a trace exactly five years to the day that a girl named Stephany Flores was murdered in Lima. What's the connection you ask? Well...allegedly...Joran Van Der Sloot * sound familiar? was the last one to see Stephany as well. Her body was found in his hotel room, stabbed and wrapped in a blanket.

Think what you want... but honestly? Van Der Sloot's late father was a prominent judge where he was before...but Daddy is not here to bail him out this time! His lawyer says that he has a bullseye on his back! Really? A bullseye! He's lucky it wasn't my daughter because I would not need a bullseye!

Lawyers sometimes amaze me! I don't know how some sleep at night! I hope there is justice in this and closure! It is a shame that another family has to go through what the Holloway's did. Had he been in jail for the other " alleged" crime, maybe this wouldn't of happened? Just saying!

My prayers go out to both families...God Bless these two families, I hope they get the justice that has been well deserved for a long time...what's that saying...Kharma's a b***h!

Oh yeah did I mention he's on the run....not surprising...

ACCORDING TO http://www.lehighvalleylive.com. There is a couple that is planning to wed on June 12th of this year. BUT...24 years ago they were born on the same day in the same hospital, where their mothers shared a maternity room together? I guess it's kinda cool in a weird sorta way...Some people say it was destiny...but really?!? I mean their mothers did stay in touch...and maybe prompted them...a lil? Who knows? I personally think it's like brother-sister creepy but whateva...who am I right? Good luck!


STAY AWAY FROM THE CAFFEINE...



Ok so this 17 yr old from NJ decides he is going to poop in a classmates soda during an auto-body shop. WHAT!!! WHAT!!! YES I SAID POOP! That is just EWWW! Really what kind of parents raised a kid to do that?!? If my kid EVER did something that gross or indecent I would kick their a**! The kid was charged with tampering with a food product...ya think?

The judge on this case ordered the teenager to serve probation along with 200 hours of community service. The boy has to write a letter to the victim apologizing. He also has to write a 1,000-word report on "why it's unhealthy to ingest fecal matter."

I'll give you four words...because you just shouldn't!!! What they should do is make that kid drink from the same can and see how good it is! Now that would be justice! GROSS!!!

LESSON: Don't be a weirdo!


Did you ever...

feel like just up and moving, just getting away from it all? Starting over somewhere else. Where noone knows you...

Shawn & I did that almost 5 years ago and I am getting the itch again. I obviously have deep rooted issues but really wish I could start fresh...Or maybe from being in the military so long...I just can't change?!?

If it weren't for my kiddos...I would have been packed and gone by now! Actually my kids are sooo great that they really wouldn't care, I don't think? I think my daughter would...but the boys wouldn't give a crap I love the unknown (at times). I have met some great people here & some not so much...but there is so much in the world that I haven't seen and wish that I could.

I guess I am going to have to wait til the kids move out 10 years from now...I just feel like there is too much darn drama where I am and I want out..but I guess you can NEVER escape it....but it sure is nice to think I can...
