Some Simple Recipes You Might Like! If Not...Oh Well...

So the other night when my hubby was out of town, we (the kids & I) decided to make s'mores...it was rainy out so the fire was out of the question...none likes soggy s'mores...So we improvised! Ok so it doesn't take a brain scientist to figure this out but here's what I recommend:


2 slabs of graham cracker
1 mini herseys
2 marshmellows


Place graham cracker on microwave safe plate (yes I had to mention safe)
place marshmellows on graham cracker slab

Depending on your microwave wattage, will depend on how long you cook it for. I cooked mine for about 10-15 seconds.

Remove plate carefully from the microwave and place mini hershey bar on top and then top with the other graham cracker slab. Press down until the marshmellow oozes out of the side.



Yummy! Quick & Super Simple! They were a huge hit!

Just because it's raining doesn't mean you have to give up on S'mores! Now if you don't have a microwave...then I don't know what to tell ya...

Mexican Lasagna




So I remembered one time at a Church dinner, we had a Mexican Lasagna but with real lasagna noodles, not tortillas. So here is my doctored recipe. My family ate the whole pan. I served it with my secret fresh salsa (I will share later-not ready yet to give this to the world-haha) and mexican rice. YUMMY!

THIS WILL MAKE ONE 9 X 12 DISH WHICH FED MY FAMILY OF FIVE (INCLUDING ONE VERY HUNGRY TEENAGE BOY)



Looks kinda gross but trust me it's good & super easy! My camera is kinda sucky!

1 lb of ground beef
1 packet of taco seasoning
1 box of uncooked lasagna noodles (any brand is fine)
1 large jar of salsa or 2 small jars
1 reg can of enchilada sauce (any brand is fine)
1 small can of diced chiles
1 small can of olives (optional)
1 can of mexi corn
2 8 oz. bags of cheese (I used mexican cheese & colby/monterrey)
1/2 of green pepper diced
1/2 medium onion diced
1 cup of shredded lettuce



1. Preheat your oven to 350 degrees
2. Over medium heat,Brown ground beef, rinse & drain.
3. Mix ground beef & taco seasoning together.
4. Remove ground beef from heat into large bowl
5. Add remaining ingredients to the bowl except cheese, mix well.
6. In seperate bowl, mix both bags of cheese together.
6. Spray 9 x 12 pan with cooking spray.
7. Line uncooked lasagna noodles in pan
8. Pour taco bowl mix, just enough to cover noodles (about 1/3)
7. Sprinkle the layer with cheese mixture
8. Repeat layer two more times. (noodles,mixture,cheese)
9. Bake covered about 1 hr. 15 minutes.
10. Take out and allow it to cool for about 5 minutes.
11. Top with 1 cup of salsa, remaining cheese (if any) shredded lettuce and olives (optional) My kids don't like them but I love them!

Garnish with guacamole and/or sourcream
